Introduction

Spinach and Feta Puffs are a delightful Mediterranean-inspired dish that combines the rich flavors of spinach and feta cheese encased in a golden, flaky puff pastry. This recipe is perfect for appetizers, breakfast, or a light lunch. The combination of spinach and feta is a classic in Greek cuisine, known for its savory and slightly tangy taste.

Instructions

  1. Preheat your oven to 200°C (180°C fan) or 400°F. Line a baking sheet with parchment paper.
  2. Finely chop the onion and mince the garlic cloves.
  3. Heat the olive oil in a pan over medium heat. Add the chopped onion and sauté until translucent.
  4. Add the minced garlic to the pan and cook for another minute until fragrant.
  5. Add the spinach to the pan and cook until it wilts. Season with salt and black pepper.
  6. Remove the pan from heat and stir in the crumbled feta cheese. Set the mixture aside to cool slightly.
  7. On a lightly floured surface, roll out the puff pastry sheets to about 1/4 inch thickness. Cut each sheet into 4 equal squares.
  8. Place a spoonful of the spinach and feta mixture in the center of each square.
  9. Brush the edges of the squares with a little water and fold each square diagonally to form a triangle. Press the edges with a fork to seal.
  10. In a small bowl, beat the egg with a tablespoon of water to make an egg wash. Brush the tops of the puffs with the egg wash and sprinkle with sesame seeds if desired.
  11. Place the puffs on the prepared baking sheet and bake for 20-25 minutes or until golden brown.
  12. Remove from the oven and let cool for a few minutes before serving.

Chef's Tips

  • Ensure the spinach mixture is not too wet before adding it to the puff pastry to prevent soggy puffs.
  • You can make the spinach and feta mixture ahead of time and store it in the refrigerator until ready to use.
  • For a twist, add a pinch of nutmeg or red pepper flakes to the spinach mixture for extra flavor.

Presentation and Accompaniments
